  1. Delicious vegan, gluten free, soy free chocolate cake.  Made with fresh zucchini for moisture and richness.  As someone with such a limited diet this is the first truly cake-like dessert I’ve had in almost a year and it was wonderful!  My family (who all have very different tastes in desserts) also loved it!  The recipe was adapted from this version: http://lizlemonnights.wordpress.com/2012/07/10/chocolate-zucchini-cake-with-dark-chocolate-icing/
I just used gluten free all purpose flower and almond milk instead of their gluten/soy alternatives.  I also split the batter into two (using a regular 9 inch cake pan instead of a spring form pan) and making two cakes.  Give it a try!  =]
